The Astragalus plant is a part of the legume family that has over 3,000 species of herbs and small shrubs. It is a perennial plant native to the cooler climates of the Northern Hemisphere and it can grow anywhere from 16 to 36 inches tall. The steams tend to be hairy with 12 to 18 leaflets. 
 
Cultivation of the Astragalus plant is a long process. Growers must wait three years before the roots are ready to be harvested.
